Beef noodle soup is an immensely popular dish in Taiwan. Everyone has strong opinions on what makes the soup delicious, what their preferred type of noodle is, and even their favorite cut of beef. The Taipei City government has begun holding annual festivals for this national favorite, and this year’s event is just a few months away.
Taiwanese people love their beef noodle soup. And they’re relieved to learn that in spite of COVID-19, Taipei’s annual Beef Noodle Soup Festival is still on this year.
Every year, vendors and restaurants that sell beef noodle soup can sign up to compete in the contest. Contestants are divided into three groups based on the type of broth they use: clear, braised, or tomato-based. Three winners are then chosen from each group.
This year, non-traditional flavors will be joining the competition. One Japanese chef says he will be using ramen noodles in his beef noodle soup. Meanwhile, another contestant says the restaurant where she works will be entering the competition with dry, tossed noodles instead of a noodle soup.
Sign up by the end of August if you think you have a winning beef noodle soup recipe! Judges will choose the winners in late October, and the city government will make a map for beef noodle soup aficionados that shows where to find the best spots in town for sampling this delicacy.
