Industries across Taiwan are suffering from the ongoing drought, and it’s no surprise that agriculture is one of them. But scallion farmers in Yilan have it the other way. Their problem? Constant rain. 

Stuffed scallion buns sizzle in a layer of oil. And the cook’s hands don’t stop moving, because these fried treats are in hot demand. One man says it’s all about the filling.

Sanxing scallions are the pride of Yilan’s farmers. But while the rest of the country suffered drought, three months of non-stop rain in the northern county last year almost ruined their crop.

Luckily, farmers in nearby Hualien County were on hand to help. They planted seedlings in their own fields. Growing conditions were ideal, but the process still tested the farmers’ expertise. One farmer says you have to plant them upright, with plenty of straw.

Almost four months later, one ton of the crop is ready for harvest, with more than fifteen more tons on the way. Once checks for disease are completed, the seedlings will be ready to head back home.
