A French restaurant owned by Taiwanese chef Andre Chiang has been ranked 32nd on Restaurant magazine’s World’s 50 Best Restaurants for 2016. Restaurant Andre, located in Singapore, moved up 14 places from last year.
The British magazine described Restaurant Andre as “high-concept, Mediterranean-inspired fine dining in the Lion City.” Chiang’s cooking is based around eight elements of gastronomy including salt, texture, and memory. He describes his theory of cuisine in his book “Octaphilosophy.” Of his signature dishes, he is best known for his warm foie gras jelly with black truffle coulis.
Chiang was born in Taiwan and trained as a chef in France. He worked in Michelin-star restaurants before settling in Singapore. He is co-owner of Raw, an innovative new restaurant in Taipei.
Restaurant magazine named Osteria Francescana in Modena, Italy, as the world’s best place to eat. The restaurant finally made it to the top spot after placing second for the past two years.
